Spanish rice is easily our 4 year old’s favorite side dish. So, we have been working on perfecting this vegan Spanish rice recipe for him. Now, we realize there are lots of different ways to prepare this delicious side dish. Every Mexican restaurant we visit has very different rice. Some we absolutely salivate for and others well – eh not so much.
This version actually surprised us. We kept coming up with rice that had an over powering tomato taste. So, we decided to play around with adding some fun pantry spices. While tasting this version, our oldest son happily said “yay, this is the one I love the most.” We also agree, and hope you do too!

Vegan Spanish Rice Ingredients
Spices: garlic (fresh and powder), salt, parsley, thyme, paprika, basil, onion powder, cumin
Key Elements: white basmati rice, tomato sauce
The Other Stuff: avocado oil
Prep & Cook
Mince the garlic
In a bowl: mix water, tomato sauce and all spices together
In a large saucepan, add the oil and uncooked rice
Heat until rice is golden brown, then add in the bowl mixture
Simmer for 30-40 minutes
