
There is something so stress relieving about homemade baked goods for breakfast. Our children just love muffins, so we are always creating new and fun recipes. Our 2-year-old consistently requests blueberry muffins, so we have perfected them. Vegan baking is always daunting, but we have really perfected dairy free and cruelty free options. We just love our vegan blueberry muffin recipe, and hope you enjoy it as well! These muffins are so comforting and delicious!

Ingredients:
1 1/4 Cups oat milk
2 1/4 Cups flour
1 Cup sugar
2 Tablespoons baking powder
1/2 teaspoon salt
1/4 Cup coconut oil
3 Tablespoons vanilla
1 3/4 Cup blueberries

Steps:
Heat oven to 375°
Add milk, sugar, oil, and vanilla to bowl and mix
Add flour, baking powder, and salt to bowl and mix together all ingredients
Add in blueberries and carefully fold them into batter
Cook for 25 minutes (or until a toothpick can be inserted into the center of a muffin and pulled out without any batter sticking to the toothpick)
