Simple Homemade Vegan Waffles



We recently purchased a waffle maker. It is easily the most used appliance in the kitchen (outside of our Vitamin for our daily smoothie, of course). I have to admit, when Greg suggested the purchase, I quickly hesitated at the thought of another appliance. Wow, am I glad he convinced me! We so much fun making simple homemade vegan waffles for breakfast. It’s a much more sustainable option that eliminates the use of plastic and packaging, and lets you control your own ingredients. Which gives you the option to make it healthier as you please, and substitute for allergy and dietary preferences. Plus, you can add in any yummy fruit into the batter and it’s super fun for the whole family!


Ingredients:

  • 1 1/2 cup plant-based milk

  • 2 teaspoons apple cider vinegar

  • 2 cups of all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon sea salt

  • 1 tablespoon brown sugar

  • 1/4 cup melted coconut oil

  • 1/2 teaspoon vanilla extract


Make the Buttermilk:

  • In a small bowl, mix the milk with the apple cider vinegar.

  • Let sit for 5 minutes.

Make the Batter:

  • In a large mixing bowl, mix all of the dry ingredients.

  • Then add in the remaining ingredients.

  • Mix them all thoroughly together, removing clumps.

Cooking Time:

  • Pour the batter into your waffle maker. Just pour in enough so that it covers the bottom.

  • Close and cook for 3 minutes.

  • Remove from waffle maker.

  • Top with your favorite fruit, powdered sugar or maple syrup!
