
Broccoli cheddar soup is one of our favorite fall soups. In fact, we could eat it all year long. But as the crisp weather of Fall arrives, we crave We crave Panera Bread’s comforting broccoli cheddar soup. Fortunately, we were able to veganize it and are so excited to share this easy vegan broccoli cheddar soup recipe with you. It’s quick, easy and so comforting after a long stressful day.
Ingredients:
3 tablespoons & 1/4 cup of vegan butter
1/2 medium sized onion, diced
1/4 cup of all-purpose flour
2 tablespoons & 2 cups of oat milk (or the plant-based milk of your choosing)
3 cups of vegetable broth
2 cups of chopped broccoli florets
1 cup of carrots, chopped
1/2 teaspoon of salt
1/4 teaspoon of crushed black pepper
1/2 teaspoon of garlic powder
1 3/4 vegan cheddar cheese, grated or shredded
The Prep:
Dice the onion
Chop broccoli florets
Chop the carrots
Cooking Steps:
In a small saucepan, heat 3 tablespoons of butter over medium heat. Add in the onion and sauté until slightly browned. Place to the side.
In a large pot, whisk together 1/4 cup of melted butter and 1/4 cup of flour in the pot
Add 2 tablespoons of oat milk. Cook for 3-4 minutes, stirring frequently.
Gradually add 2 cups of oat milk to the pot.
Stir in 3 cups of vegetable broth
Simmer on low heat for 15 minutes
Add in the broccoli, carrots and sautéd onions
Add in the salt, pepper and garlic
Simmer for 25-30 minutes, until vegetables are soft
Add in the cheddar cheese, and stir until melted and mixed throughout.
Serve & Enjoy!
Serve alone, with salad, and top with our tasty savory croutons!
